Free Healthy Recipe - Baked Pumpkin with Orange Walnut sauce

The true macrobiotic meal satisfies the palate with five flavors: sweet, sour, bitter, pungent, and salty. That way you'll not crave anything else. This dish satisfies the sweet component of the meal.

For a macrobiotic banquet, this dish is delicious and looks amazing served with wok fried green leafy vegetables, brown rice, beans and small pieces of pickled daikon.

Ingredients
2 tbsp olive oil
2 tbsp water
2 tbsp walnuts, roughly chopped
2 tbsp kudzu, (ground and mixed into a white paste with water
½ tbsp hatcho miso
½ onion minced
Method

Preheat oven to 180 degrees Celsius.

Place in a deep baking dish the whole pumpkin with 1 tbs olive oil and water and cover with foil. Bake for approx 50 - 60 minutes or until tender.

Sauté the onion in 1 tablespoon olive oil until soft and sweet. Add the orange juice and 1 tablespoon walnuts and heat gently. Transfer to a blender and mix until the liquid is smooth. Return the sauce to the pan. Mix the miso into a smooth paste with some of the mixture. Warm the remaining liquid in a small pan. Add the kudzu and continue to stir until the sauce thickens. Remove from the heat and add the miso for extra flavour. Remove the pumpkin. Slice each in half and scoop out the seeds and serve with the sauce poured over the top topped with the remaining walnuts sprinkled over the top.

Note: Boil miso for no more than 1 minute or you'll kill the friendly health promoting bacteria. Miso is a wonderful strengthening food and excellent to feed a cold or flu.
