Free Healthy Recipe - White nectarine bircher muesli

Jazz up your usual breakfast muesli using in season white nectarines.

*Muesli best consumed within 2-3 days

Ingredients
400 ml apple juice
½ cups dried fruit, roughly chopped (e.g. figs, dates, prunes)
50 grams macadamia nut, roughly chopped
1 cup yogurt, vanilla
1/3 cups coconut, flakes, toasted
1 punnet raspberry
Method

Combine oats and apple juice in a medium glass or ceramic bowl. Cover with plastic wrap and place in the fridge overnight to soak.

Coarsely grate 1 1/2 nectarines, discarding skin. Add grated nectarine, dried fruit, macadamia nuts, yoghurt, raspberries and two-thirds of the coconut to oat mixture and stir to combine.
Thinly slice remaining nectarine. Divide bircher muesli between glasses and garnish with remaining nectarine and coconut.

Makes 4 servings (serve = Needs to be left overnight)
