Free Healthy Recipe - Open Chicken Sandwiches

Dairy free, Low fat, Low GI, Low sugar

Here's a healthy sandwich, with a fraction of the fat but just as much taste as a regular chicken and mayonnaise sandwich.

150 grams chicken - organic, free-range, cooked and diced
½ cup celery, finely diced
1 tsp dill, chopped
1 tsp capers, rinsed and finely chopped
1/3 cup walnuts, roasted and roughly chopped
2 tbsp mayonnaise, whole egg
sea salt a pinch
4 slices bread, soy & linseed
peppercorns cracked black to taste

Combine the chicken, celery, dill, capers, walnuts, and mayonnaise in a bowl and season with salt.

On each of 4 serving plates, arrange salad greens on top of a slice of bread and spoon over the chicken mixture. Season with cracked black pepper and serve.
