Free Healthy Recipe - Spiced Chicken

Marinade is also suitable for pork and can be stored in the fridge for a month.

3 Garlic cloves
1½ Tbsp Smoked paprika
1½ Tbsp Ground cumin
1½ Tbsp Ground coriander
1 Tsp Ground turmeric
½ Tsp Cayenne pepper
2 Tbsp Flat leafed parsley, Chopped
1 Lemon Juiced
180 ml olive oil
6 Chicken fillets, skin on

Put all ingredients except chicken in a bowl and mix.
Add chicken, coat in marinade, and marinate overnight.
Preheat oven to 180 degrees.
Heat a heavy-based pan, seal chicken skin-side down, then transfer to roasting tray to cook in oven 15 minutes.
Rest in a warm place for 5 minutes. Slice and serve on warm pearl couscous with tahini yoghurt.
