Free Healthy Recipe - Grilled Vegetarian Sourdough Sandwich

Dairy free, Low fat, Low GI

It's a good idea if you're chargrilling veggies for the evening meal, to make more than you need to put in sandwiches the next day.
And here's the very sandwich to make the next day.

Ingredients
½ cup rocket
40 grams goat's cheese
1 tbsp beetroot relish, (see recipe list)
Method

Fill the bread with the veggies and salsa and place until a grill or sandwich maker to toast for 5 minutes.

Note: If using a sandwich maker lightly brush the outside of the bread with olive oil.

Makes 2 servings
