Free Healthy Recipe - Tomato & Olive Salsa

Dairy free, Gluten free, Low carbohydrate, Low fat, Wheat Free

This salsa was designed for use in our patty recipes (see recipe list) but can be used as a topping for many dishes such as fish, chicken or red meat, or on toasted sourdough as a bruschetta.

Ingredients
3 medium vine-ripened tomatoes, cut into small pieces
½ bunch coriander, roughly chopped
½ small red chilli
1 lime juiced
½ cup large green olives, pitted and finely chopped
½ tbsp capers, drained and chopped
Method

Combine the ingredients together and leave to rest for ½ hour - 1 hour before serving over the cooked patties.

Tip: an olive/cherry pipper may seem an unnecessary kitchen indulgence, but it makes this dish more fun to make - especially if you're delegating tasks to the kids.
