Free Healthy Recipe - Fish Tikka Kebabs

Dairy free, Gluten free, Low carbohydrate, Low fat, Wheat Free

If you're not a fish eater, the same marinade works well with chicken (try to buy organic chicken if you can, or at least hormone and chemical free).

Ingredients
1 tbsp lemon zest
½ cup lemon juice
2 tsp turmeric
2 large cloves garlic, chopped
1 tbsp ginger, grated
1½ kg firm white boneless fish fillets, (ling, red emperor, monkfish all work well – but not shark)
Method

Cut the fish into cubes approx 2 ½ cm thick. Combine the marinade ingredients and pour over the fish Set aside for 1 hour.

Thread the fish on pre soaked timber skewers. Pre heat the grill and cook for 12 - 15 minutes regularly turning kebabs to cook evenly.

Note: Mercury is naturally occurring in the ocean sediment and on the land. It is absorbed through the tissues into the flesh of small fish. Shark, (or flake) higher up the food chain feeding on large quantities of small fish tend to contain higher amounts of mercury and should therefore be avoided.
