Free Healthy Recipe - Summer Leaf Salad

Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

A delicious Summer Salad filled with Summer figs and pecans.

Ingredients
160 grams pecan nut, halves
6 figs ripe, quartered
Raspberry Dressing:
80 ml olive oil, extra virgin
3 tsp vinegar, raspberry
2 tsp mustard, wholegrain
2 tsp honey
1 pinch salt
1 pinch peppercorns
Method

Preheat the oven to 200 degrees celcius.

Spread the pecans over the base of a roasting pan. Roast in the oven for 6-10 minutes or until lightly browned. Set aside to cool.
To make the dressing, place the dressing ingredients in a screw top jar and shake well. Season with salt & pepper.
Place the salad leaves on a plate or bowl, top with figs and pecans.Drizzle with dressing and serve.

Makes 12 servings (serve = salad)
