Free Healthy Recipe - Chicken Thighs with Macadamia, Sage & Parmesan

Some people avoid chicken thighs as they think they are fatty however with the skin removed this dish is low in fat but high in protein & rich in minerals including zinc, plus it only takes 30 minutes to make! Use free range chicken as it has a superior taste & texture.

Ingredients
640 grams chicken - organic, thighs, sin removed & fat trimmed
2 teaspoon olive oil
1 lemon juiced
peppercorns black, ground
½ cup macadamia nut, roughly chopped
½ cup parmesan cheese, grated
2 tablespoon sage, chopped
Method

Preheat oven to 180C.

Place the thigh meat on a flat chopping board & brush with olive oil,1/2 of the lemon juice and season according to taste with black pepper. Either by hand or in a food processor roughly chop the macadamias & then place them in a bowl with the parmesan, remaining lemon juice and sage.
Sear the chicken on both sides for 2 minutes & then place on a baking tray. Spoon the macadamia mixture over the chicken & place in the preheated oven to cook for a further 15 minutes.
Serve with green beans & other veggies of choice.
