Free Healthy Recipe - Rocket & Sprout Salad

Dairy free, Low carbohydrate, Wheat Free

If you are unused to eating fresh sprouts choose mung bean and aduki bean sprouts in favour of the larger sprouts like chickpea and brown lentils. Rocket leaves are a good source of folic acid and contain eight times more calcium than iceberg lettuce. The plant is related to broccoli, a cruciferous, cancer fighting vegetable.

Ingredients
1 large bunch rocket

Dressing
½ tbsp Mugi miso
2 limes juiced
2 tbsp sesame oil
Method

Combine the salad ingredients. Combine the dressing ingredients thoroughly then pour them over the salad.

Note: In ayurvedic healing, gas (vata) can be counteracted by eating sprouts with oily foods like avocado and oily salad dressing.
