Simple celery soup:

Ingredients:

1 tablespoon olive oil
1 onion, chopped
3 garlic cloves, crushed
6 cups chopped celery
4 cups vegetable broth
Salt and pepper to taste
Fresh parsley for serving (optional)
Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until the onion is translucent.
Add the chopped celery to the pot and cook for 5-7 minutes, until the celery is slightly softened.
Add the vegetable broth to the pot and bring to a boil. Reduce heat to low and let the soup simmer for 20-25 minutes, or until the celery is very soft.
Use an immersion blender or a regular blender to puree the soup until it's smooth.
Season with salt and pepper to taste and serve hot, garnished with fresh parsley, if desired.
