Free Healthy Recipe - Hazelnut Jammy Dodgers

There's a health food store in Sydney that sells homemade nutty biscuits with a scoop of baked jam on top. Around that time of the month I detour to buy one, my wallet considerably lighter for the privilege. While not the same, these come a close second and by my calculations this batch would cost a hefty $68 from my health food store.

Ingredients
1 cup hazelnuts
pinch sea salt
1/3 cup maple syrup
all natural jam to fill
Method

Preheat the oven to 200 degrees Celsius.

In a processor combine the hazelnuts, flour, sea salt, nut spread and maple syrup. Add enough water until the mixture forms a malleable dough. Roll the biscuit mix out to approx ¾ cm thick and using a cookie cutter cut circles.
With a small teaspoon, make indents in the surface of each and spoon a small amount of jam onto the surface of each biscuit.

Bake for 15 minutes baking sheet lined with baking paper.

Note: Most jams are made with fruit, sugar and fruit pectin. Inferior quality brands may add artificial colours and preservatives. Imported natural brands are available with no added sugar. When buying jam always check the ingredient list to ensure that fruit is listed first and it shows a high percentage of fruit per 100g. The nutritional panel is deceiving as shows the product is all sugar since natural fruit falls into the same category as processed sugar.

Makes 18 servings (serve = 1 biscuit)
