Cut scores across the thickest sections of the chicken. Sear each side of the chicken for 2 - 3 minutes each side.
In a food processor combine the pinenuts, sage, preserved lemon and breadcrumbs.
Lay the chicken pieces onto oiled baking pan and spoon the crumb mixture over the chicken, pressing it into it's flesh. Bake in the oven for a further 10 - 15 minutes, turning the tray around regularly to ensure the crust doesn't burn.
Serve with steamed beans.
