Free Healthy Recipe - Steamed Fish Balls with Bean and Tuna Sauce

Steaming this fish in a blend of coriander and lemon zest gives these fish balls a clean fresh taste.
The bean and tuna sauce is a variation on the Italian tonnato sauce, made with tuna and mayonnaise. While a traditional tonnato is delicious it is high in kilojoules. Blending tuna with cannelini beans creates a low fat, low GI and high fibre sauce that's equally delicious served as a dip with crudités.

Ingredients

Fish Balls:
700 grams white fish
2 cloves garlic
1 tbsp coriander, chopped
1 tsp lemon zest

Bean and Tuna Sauce:
1 400 gram can organic cannellini beans
1 95 gram can tuna, drained
½ lemon juiced
1 tbsp capers, rinsed
2 bunches English spinach
Method

Combine the fish, garlic, coriander, and lemon zest in a food processor. Using your hands mould the mixture into small balls and place in a steamer to steam for 7 minutes.

To make the sauce, blend all the ingredients together in a food processor until smooth. Steam the spinach. Serve the fish balls over steamed spinach with the accompanying sauce.

Note: Capers are a low kilojoule pickle which can help stimulate the production of salivary enzymes and aid digestion. To reduce the amount of salt thoroughly rinse them before eating.
