Free Healthy Recipe - Sprouted spelt open sandwich

Dairy free, Low GI, Wheat Free

This is an open sandwich - the filling is placed on top of the bread, and it can be eaten with a knife and fork so the meal is more substantial than your average lunch.

Ingredients
2 slices sprouted spelt bread, toasted
1 tbsp tahini
¼ tsp tamari
½ lemon juiced
½ carrot grated
½ small bulb beetroot, grated
½ cup bean sprouts
1 cup baby spinach, chopped
Method

Grate carrot and beetroot and mix with bean sprouts, chopped spinach, tahini, tamari and lemon juice.
Put bread in the toaster.

Arrange salad on top of toasted bread and add cracked black pepper to taste.
