Free Healthy Recipe - Green Apple and Watercress Salad

Dairy free, Low carbohydrate, Low fat, Low GI

This fresh oil free salad is delicious on its own or served with steamed or grilled chicken, white fish or tofu.

Ingredients
2 Granny Smith apples cored and cut into fine strips
1 tbsp lime juice
12 mini Roma tomatoes
4 cups watercress, trimmed
2 tbsp walnuts, dry roasted and roughly chopped
¼ cup coriander leaves, roughly chopped
2 shallots shredded
1 clove garlic
1 red chilli deseeded and finely chopped
1 tsp lemongrass, finely chopped
½ tbsp maple syrup
½ tbsp fish sauce
2 limes juiced
Method

Sprinkle the lime juice over the apple before combining it with the tomatoes and watercress.

Combine the dressing ingredients together in a blender. Drizzle it over the apple, tomatoes and watercress. Top with shallots and walnuts.

Note : Watercress and green apples are both excellent body cleansers. Both rich in antioxidants, watercress acts as a natural diuretic while the soluble fibre in apples can help absorb toxins in the blood.
