While you can still buy mango and the weather is warm, this is a scrumptious meal to enjoy for a light lunch or dinner.
Make the beetroot in advance
Using the lettuce leaves like cups, fill each cup with beetroot, shredded chicken, and mango.
Drizzle with olive oil, plum vinegar and lime juice. Season with pepper.
Top with feta and walnuts and serve straight away.
