Free Healthy Recipe - Berry and Coconut Salad

Gluten free, Low carbohydrate, Low fat, Low sugar, Wheat Free

To quote the words of a friend's son this Christmas - " Learn to make this mother!" It's really just a magnificent way to a high fibre fruit salad. I make a point of eating as many berries as possible over the season and here's another way to present them. Topped with coconut toasted in maple syrup it will fool anyone to believing they're eating the most decadent dessert. It's highly likely that you and the family will like this dish so much it will become a favourite out of season. The solution, vary the fruit and/or use frozen.

Ingredients
1 tbsp maple syrup, (pure maple syrup, not the flavoured kind)
1 punnet blueberries
1 punnet strawberries
1 large mango
1 200g tub thick set organic natural yoghurt, (sheep's is great)
Method

In a dry frying pan toast the coconut flakes in the maple syrup until golden.

Wash and cut the fruit. Fill a metal cutter with the fruit. Add a layer of yoghurt and top with toasted coconut. Repeat until all 4 are made.

Note: Berries rank number 1 top antioxidant foods you can eat. Wild berries supply even more antioxidants so if you're lucky enough to stumble upon a bush.
