Free Healthy Recipe - Seasoned Spinach and Olive Oil

Dairy free, Low carbohydrate, Low fat

Silver beet (swiss chard) cooked badly is horrible. I'm sure those who think they don't like it were served it with the stalks left on. Silver beet stalks taste terrible. Grab the bunch, tear the leaves away from the stalks and throw the stalks away (or use them for compost). If you haven't enjoyed spinach in the past, have another go. Cooked properly it is delicious and works well with many recipes, particularly those listed below. I hope you like it - if you eat it regularly you'll soon be bursting out of your skin with health.

Ingredients
1 large bunch silver beet (swiss chard), stalks removed
pinch sea salt
1 tbsp olive oil
za'tar, freshly ground black pepper, gomasio, dukka or lemon juice to taste (optional)
Method

Tear the leaves from the silver beet stalks and wash thoroughly in cold running water. Cut into smaller pieces along the veins of the leaf.

Add the salt to a large pan of water and bring to the boil.
Add the silver beet, cover and cook for 2 minutes. Drain immediately and leave to cool slightly before squeezing out any excess moisture.
Drizzle with olive oil and sprinkle with the za'tar, freshly ground black pepper, gomazio, dukka or lemon juice, or leave as is.
