Free Healthy Recipe - Hedgehogs

Dairy free, Low fat, Low GI, Low sugar, Wheat Free

I know the name is awful, but I didn't want to put you off with the word 'carob'. Someone once told me that these little treats tasted like chocolate hedgehogs and, judging by the quantity she consumed, it seemed to be a positive thing. If you have a sweet tooth, and you like to eat healthily, you may prefer to end your meal with these healthier alternatives rather than abstain altogether.

Ingredients
2 cups rolled oats
1 cup dates
1 cup sultanas
½ cup almonds
2 tbsp carob powder
Method

Combine all ingredients in a food processor until the mixture resembles fine breadcrumbs. Using your hands, mould the mixture into balls. Refrigerate for 30 minutes before serving.

These hedgehogs can be stored in the fridge for up to 3 weeks.

Makes 24 servings (serve = 1 piece)
