Free Healthy Recipe - Ruby Red Atlantic Salmon

In Oriental medicine the grapefruit is used to treat alcohol intoxication, poor digestion, and belching!

I doubt this delicious grapefruit salsa will keep you under the 0.05 blood alcohol reading if you over indulge, but it is delicious. The combination is superb and looks particularly magnificent served with your favourite green vegetable.

Ingredients
1 clove garlic
1 handful mint, finely sliced
4 roma tomatoes seeded
4 Atlantic salmon fillets skin removed
Method

Slice between the membrane of the grapefruits to remove the pith. Finely slice the mint and dice the ripe roma tomatoes, removing any seeds.

Gently heat the olive oil in a pan. Add the crushed garlic, chopped seedless tomatoes, lots of cracked pepper, and simmer for 5 minutes. Add the mint & ruby red Grapefruit segments, continue to simmer adding the juice from the remaining grapefruit.
Whilst making the sauce place Atlantic salmon fillets under grill for approximately 3-5 minutes each side depending on how well you like it cooked.
Serve with some steamed broccolini.

Note : If you're still worried about the smell of fish around the home, wrap fillets in individual foil packets and cook in a preheated oven (180C) for 15 minutes. Once cooked, unwrap the parcel, discard the foil in the outside garbage and enjoy your dinner.
