Free Healthy Recipe - Lime and Chilli Prawns

Dairy free

This delicious fresh dish is perfect for spring and is delicious served over bean thread noodles mixed with beansprouts.

Ingredients
1 tbsp olive oil
1 tbsp ginger, grated
1 red onion sliced
800 g medium green prawns
¼ cup lime juice
1 tbsp fish sauce
½ tsp rice syrup
red chilli chopped
¼ cup coriander, fresh, chopped
¼ cup basil, fresh, chopped
2 kaffir lime leaves finely sliced
150 grams snowpeas, halved
Method

Peel and devein prawns, leaving tails intact.

Heat oil in wok, add ginger and onion and stir fry over high heat for 1 minute. Add prawns and stir fry for 2 minutes, then add lime juice, vinegar, syrup, chilli, herbs, lime leaves and snowpeas and cook further 2 minutes. Serve on noodles.
