Free Healthy Recipe - Lamb with kumera tagine & macadamias

Dairy free, Low sugar, Wheat Free

Ingredients
2 tsp coriander seed, ground
2 tsp cumin, ground
2 tsp paprika
1 bunch coriander leaves, with stems, torn
1 onion chopped
1.2 kg lamb shoulder, boned and cut into 5 cm cubes
1½ cups chicken stock
1 cup macadamia nut, roasted
12 dates pitted
Method

Preheat oven to 150 degrees

Combine spices, fresh coriander, onion garlic and lemon juice in a blender or food processor and blend until almost smooth.
Heat the oil in a large fry pan and add 1/3 of the lamb. Brown on all sides.
Transfer to a baking dish and repeat until all the lamb has browned.
Add the coriander mixture and stock to the frying pan, bring to the boil then add to the lamb.
Cover the baking dish with foil and bake for 2 hours.
Add the macadamias, kumera and dates and cook for a further hour or until the lamb and kumera are tender.

Serve with brown rice or quinoa and accompanying steamed greens.
