Free Healthy Recipe - Ricotta Stuffed Truss Tomatoes

Take advantage of the rich and flavoursome truss tomatoes around this season and enjoy these yummy stuffed treats. Delicious as an entree or as entertainers finger food.

Ingredients
500 grams Tomato, truss
100 grams Rocket
180 grams Ricotta, reduced fat
3 tbsp Lemon juice
¼ tsp Sea Salt
¼ tsp Peppercorns, ground
3 tbsp Olive Oil
Method

Slice the tops off the truss tomatoes and reserve.
Scoop out some flesh and discard.
Combine the ricotta with 1-2 tbsp of the lemon juice (add sufficient juice to your
liking) and the chopped basil and season with salt and pepper.
Spoon into the tomatoes and replace the lids.
Combine the olive oil and remaining lemon juice and season with salt and
pepper.
 Toss the rocket leaves in the dressing and serve alongside the tomatoes.
