Free Healthy Recipe - Grilled Beef Burgers with Roasted Sweet Potato and Mexican Salsa

Gluten free, Low GI, Low sugar, Wheat Free

This is an extremely easy meal the whole family will enjoy. You can buy mild flavoured salsa dips (additive free) from the supermarket or spicy chilli jams from quality delis - both are delicious with home made burgers.

Ingredients
1 pinch pepper
1 tsp mixed dried herbs
½ onion finely chopped
600 grams sweet potato, peeled and cut into rough sized wedges
Method

In a large bowl mix the minced beef with the herbs, onion and seasoning.
Mould them into 8 flat patties with your hands and set aside at room temperature.
Preheat the oven to 200C.

Brush the chopped sweet potato with a slight amount of olive oil and season with a light sprinkle of sea salt. Place them in the oven to cook for 20 - 25 minutes.
Heat a grill pan and sear the patties for 3 minutes each side. Place them on the lower in the oven to cook through for a further 12 - 15 minutes.
serve with a spoon of salsa and steamed greens.
