A great way to utilise leftover roast or grilled chicken from dinner, by adding it to dark grainy bread and vegies for a nutritious lunch.

Ingredients
80 grams chicken breast, cooked
3 slices avocado
¼ cup carrot, grated
½ cup baby spinach
4 thin slices tomato
Method

Grate carrot, slice other vegetables.

Spread bread with avocado and fill with salad and salmon.
