Free Healthy Recipe - Provincial Lamb Soup

This meal is sweet substantial and delicious and referred to as a meal because being a soup it contains complex carbohydrates, vegetables, lean protein and a little fat. Everything you need to feel sated and fulfilled.

Ingredients
1 tbsp olive oil
500 grams lean lamb, cubed
3 cloves garlic
500 grams eschallots, peeled
1 litre chicken stock
1 can white beans, (butter beans); drained
1 bunch Dutch carrots, (washed, topped and tailed and cut in half)
2 sprigs dill
Method

In a non stick frying pan, add the olive oil and brown the lamb with the garlic. Add the eschallots and stir through for a further 2 minutes. Transfer all the ingredients to a crock pot (slow cooker) and add the stock, beans, carrots and dill and cook overnight or throughout the day.

Remove the dill and serve with chunks of wholegrain sourdough bread.

Note: (If you don't have a stock pot, simmer covered for 2 hours).
