Free Healthy Recipe - Agar Agar Fruit Jelly

Dairy free, Low fat, Low sugar

An natural alternative to sugar-laden commercial jelly, this recipe uses agar-agar as a natural setting agent. Get kids to help out in the kitchen (while supervised, of course) and they'll enjoy eating their colourful fruit creations.
Some good fruit choices are mango, strawberries, blueberries or kiwifruit. Use just one type of fruit per recipe so the colours don't mix.

Ingredients
4 cups apple juice
½ cup raisins
2 cups fresh fruit, chopped or pureed
1 tsp vanilla or almond extract, (or a squeeze of lemon)
Method

Soften agar flakes in apple juice a few minutes.

Bring mixture to boil, along with the raisins, then turn heat down and simmer for 5 minutes. Stir in fruit and flavouring, pour into a mould and allow to set a couple of hours in the fridge.

Makes 6 servings
