Free Healthy Recipe - Toddlers Easy Fried Rice

Most children love to eat cooked rice. This is a quick and easy, delicious meal the whole family can enjoy. The vegetables in this recipe can be swapped for your toddler's favourite vegetables too. Packed with loads of nutrients and energy dense, this dish will help keep your toddler happy and satisfied.

Ingredients
2 teaspoons vegetable oil
1 tablespoon onion, finely diced
½ cup carrot, diced
½ cup corn kernels
½ cup broccoli, chopped small
2 cups brown or basmati rice, cooked and cold
1 egg lightly beaten
1 teaspoon kecap manis
1 tablespoon coriander leaves, finely chopped
Method

Heat oil in a wok on medium-high heat. Add onions and sauté for 30 seconds. Add mixed vegetables and sauté for 2 minutes, stirring occasionally. Add rice and sauté for 1 minute. Add kecap manis and stir through. Add the egg and stir through again, sautéing for another minute. Remove from heat, stir through coriander and serve with meat, fish or legumes for a complete meal.

Best to use cold refrigerated cooked rice or 1 day old cooked rice therefore this recipe is best eaten on the day.
