Free Healthy Recipe - Dill and Cucumber Salad

Gluten free, Low carbohydrate, Low fat, Wheat Free

This side salad makes a crisp and fresh addition to grilled chicken or meat or spicier dishes such as tandoori chicken or curries.

1 red onion cut in half and sliced thinly
1 bunch dill, finely chopped
1½ tbsp honey

Wash cucumbers and peel in lengthwise strips, leaving skin in between each strip. Slice thinly and add to a glass bowl together with onion and dill.

In a separate bowl combine vinegar, honey, yoghurt and seasoning. Add dressing to cucumber and mix well to combine.

Let the salad rest for 15 minutes before servings to allow flavours to infuse.
