Free Healthy Recipe - Gluten Free Muesli (untoasted)

With some gluten free muesli costing as much as $14 for 500g, from a financial point of view it's worth making your own. From a health perspective it's also worth making your own as you can fill it up with many more nutritionally valuable ingredients. Puffed grains typically have a high GI therefore to counter this and make a breakfast which will sustain you for most of the morning it's good to add nuts and a few seeds.

Ingredients
½ cup dried pears, chopped
½ cup dried apricots, chopped
¾ cup pistachios, unsalted
1 cup linseeds
1 cup almonds
Method

Mix the puffed and rolled rice together with the rice bran flakes, chopped fruit and pistachios in a bowl. Grind the linseeds, almonds and sunflower seeds in a food processor until they're broken up but still retain texture.

Serve with fresh fruit and low fat milk or yoghurt.

Makes 20 servings (serve = 1/2 cup)
