Free Healthy Recipe - Kidney Bean and Sesame Salad

Dairy free, Gluten free, Low GI, Wheat Free

Lying just beneath the skin of vibrantly colourful kidney beans are phytochemicals, rich in antioxidants, and fibre. Combined with olives and sesame seeds this dish makes an incredibly healthy and delicious accompaniment to grilled chicken, fish or canned tuna.

1 can kidney beans, drained
2 tbsp sesame seeds, toasted
¼ cup green olives, diced
¼ cup coriander, washed and dried
2 cups mixed green leaves, washed
½ cup snow peas, washed
sea salt pinch

Combine the kidney beans, olives, sesame seeds and coriander together in a bowl. In a separate bowl combine the green leaves and snow peas, Mix the oil together with the white balsamic, dijon and seasoning. Toss the dressing over the leaves and snowpeas and serve with the kidney bean salad over the top.
