Free Healthy Recipe - Lentil and Pomegrante Salad

Dairy free, Gluten free, Low GI, Wheat Free

Pomegranates are in season now but many people don't know what to do woth them. Being one of the richest food sources of antioxidants, it's worth learning, and enjoying this easy and delicious salad.

1½ tbsp salted capers, fried in 1 tbsp tea oil
½ tsp lime zest
1 pomegranate seeded
1½ tbsp dill, chopped
1½ tbsp olive oil

Thoroughly rinse the capers, blot dry and fry in 1 tbsp tea oil.
Cook lentils till tnder (approx 15-20 minutes).
Remove seeds from pomegranate.

Toss all ingredients together in a bowl with olive oil and black pepper.

Makes 4 servings
