Just like a muesli bar but better. These Goji bars are a great snack when you're "on the go" but like any sweet treat should be enjoyed in moderation.

Ingredients
2 cups rolled oats
½ cup goji berries
½ cup dried pears, chopped
¼ tsp cardamom, ground
pinch nutmeg
½ cup spelt syrup
Method

Preheat the oven to 150 degrees Celsius.

Dry roast the grains in a large frying pan until golden and fragrant. Remove from the heat and place in a large bowl with the goji, almonds, pears and spices.
Heat the spelt syrup in the pan until it's runny and pour into the oat mix. Stir thoroughly to combine all the ingredients. Press the mixture flat into a lightly oiled baking sheet and bake in the oven for 30 minutes.

Note: Spelt syrup is like rice syrup or barley malt and made from the grain spelt. It's available from health food stores, but can be substituted with rice syrup if necessary.

Makes 24 servings (serve = 1 bar)
