Method
Combine the dressing ingredients and toss through the rocket leaves.
Place the greens in a bowl and serve with shaved pecorino, mango slices and walnuts.
Note: Dark green leaves such as rocket, spinach, Asian leaves and endive contain are nutritionally far more powerful than crisp pale iceberg leaves or cos lettuce. They contain numerous vitamins, minerals and fibre and antioxidants including Vitamin C, Vitamin E, Vitamin K, calcium, iron, and folate.
