Free Healthy Recipe - Spicy Walnut Salad

Low carbohydrate, Wheat Free

If you're having a late season BBQ, this salad is a showpiece. Serve it with grilled organic chicken, some wholegrain sourdough and do nothing else. Your guests will love it.

3 cups rocket
¼ cup pecorino, shaved
½ cup walnuts, roasted

3 tbsp walnut oil
1 tbsp curry powder
¼ tsp cumin
½ small chilli, deseeded and finely sliced
¼ tsp turmeric
1 tbsp hot water

Combine the dressing ingredients and toss through the rocket leaves.

Place the greens in a bowl and serve with shaved pecorino, mango slices and walnuts.

Note: Dark green leaves such as rocket, spinach, Asian leaves and endive contain are nutritionally far more powerful than crisp pale iceberg leaves or cos lettuce. They contain numerous vitamins, minerals and fibre and antioxidants including Vitamin C, Vitamin E, Vitamin K, calcium, iron, and folate.
