Free Healthy Recipe - Grilled Scallops in Avocado Oil & Garlic

Dairy free, Low carbohydrate

A little survey of mine uncovered that seafood, in particular scallops were the number one choice for anyone thinking of romance.
Scallops are a good source of Omega 3 fats, and a fantastic source of iron and zinc. And, as we know, zinc is a vital mineral in the growth and health of our reproductive organs.

Ingredients
12 scallops in their shells
1 clove garlic, finely shredded
½ lime juiced
Method

Brush one side of each scallop with avocado oil.
Remove them from their shells and fill each shell with ½ tsp avocado oil. Sprinkle a few shavings of garlic into the shell and season with black pepper.

Heat a grill pan or small frying pan and sear the oiled side of the scallop for one minute. Remove them from the grill and return to their shells, with the uncooked side in the oil.
Place the scallop shells onto the grill and cook for a further 3 minutes.
Serve with lime juice sprinkled over each.

Note: Avocado oil has a very high smoke point and will therefore not deteriorate when used to cook on the BBQ.
