Free Healthy Recipe - Roast Pumpkin, Pinenut and Goats Fetta Wraps

Low fat, Low GI

This is a nice simple and very delicious wrap, served warm or cold. Pumpkin, like all orange vegetables, is rich in carotenoids which can be used to make the antioxidant Vitamin A. It's also a good source of numerous other vitamins and minerals including vitamin C, E, B6, E, fibre, folate, and magnesium.

Ingredients
400 grams pumpkin
½ lemon juiced
2 cloves garlic, crushed
1 red chilli deseeded
1 tbsp sage, chopped
1 tbsp olive oil
1 cup English spinach, washed and dried
75 grams goat's fetta
1 tbsp pine nuts, dry roasted
Method

Preheat the oven to 180 degrees Celsius.
Cut the pumpkin into small pieces and drizzle the lemon juice, garlic, chilli and sage and seasoning over it Heat the oil in a baking tray in the oven and once it's hot add the pumpkin. Bake for approx 20 - 25 minutes until it's cooked through.

Lay the spinach over the mountain bread and next add a layer of pumpkin. Crumble the goats fetta over the pumpkin and sprinkle the pinenuts over the top.
Roll them up and cut into halves.

Note: Not all supermarket breads are terrible. Mountain bread is thin flat unleavened bread that's perfect to use for wraps. It contains nothing but flour, filtered water and salt - the ingredients our ancestors used.
