Free Healthy Recipe - Asian Blue Eyed Trevalla

Dairy free, Low fat, Low sugar

There is not much to this dish - it takes next-to-no-time and little effort. It also tastes delicious. Don't be tempted to add a vegetable of another colour -the green everywhere adds to the appeal.

Ingredients
2 blue eye trevalla fillets small but thick and cut into chunks (2cm) (apprx. 500grams each)

Marinade
1 tsp sesame oil
2 tbsp tamari
½ lemon juiced
1 cm piece of ginger, peeled and grated
1 garlic clove roughly chopped
1 coriander root large piece crushed

Main Recipe
4 shallots cut lengthways into 5cm strips
1 broccolini bunch
½ chinese vegetables bunch (green vegetable)
2 cups oyster mushrooms, sliced
Method

Mix all the ingredients of the marinade together and marinate the fish for at least one hour.

Bring a pan of water - with one small piece of khombu in it - to the boil. Add the noodles and stir to ensure that they don't stick together. Boil for 5 minutes.
While boiling, heat the wok with 1 teaspoon of sesame oil and 1 tablespoon of olive oil. Add the shallots, mushrooms and fish (reserving the marinade). Stir-fry for 2-3 minutes. Add the remaining vegetables and stir-fry for another 3 minutes, adding the marinade at the end. Stir through for a further 1 minute.

Drain the noodles and serve under the Asian fish.
