Free Healthy Recipe - Turkey and spicy rocket and macadamia salad

If you're over cooking after the onslaught of Christmas day, here's a meal you can make in minutes that tastes delicious.

3 cups rocket
½ cup macadamia nuts, chopped
½ cup parmesan, shaved

¼ tsp cumin
¼ tsp turmeric

Combine the dressing ingredients together.

Wash and dry the rocket leaves. Toss some of the dressing over the leaves and macadamia nuts.
Arrange the leaves on plates lay the turkey on top and top with parmesan shavings.

Note : Macadamia nuts have a high fat content and although it's mainly a good fat, they are high in energy and should be eaten in moderation if you're trying to maintain weight.
