There's no question that it's much easier to buy pasta than to make it, but anyone who's made it will know it's not an exercise in economics or time saving. In the holidays, if you do have some time to spare, it's great fun making pasta and getting the whole family involved in this labour of love. And, at this stage, I'm unaware of any company producing fresh pasta made with spelt flour.

Ingredients
200 grams brown mushrooms
3 cloves garlic
2 tbsp sage, chopped
2 tbsp tea oil
1½ cups cooked turkey

Pasta:
3 large eggs
½ tsp sea salt
Method

Preheat the oven to 180 degrees Celsius.
Place the pumpkin, mushrooms and garlic in a baking pan and brush with olive oil. Roast for 20 - 25 minutes. Transfer the baked veggies to the food processor and add the turkey and other ingredients. Process until smooth.
