Free Healthy Recipe - Cucumber with Avocado, Dill and Smoked Trout

Dairy free, Gluten free, Low carbohydrate, Wheat Free

The problem with a lot of finger food is often the amount of bread and other complex carbs used. There's enough carbohydrate in alcohol (and little else of nutritional value) so it's a good idea to cut down the amount of carbohydrate in the food (for the weight conscious anyway).
Using cucumber slices as the base is a great way to serve finger food, but make sure you hand out napkins at the same time - they're a little slippery!

Ingredients
2 tbsp olive oil
½ lemon juiced
2 cloves garlic
¼ cup dill, chopped
100 grams smoked trout
Method

Chop the avocado into cubes approx 5 mm wide. Combine the olive oil, garlic, lemon juice, dill and black pepper and stir through the avocado.

Using a potato peeler, peel the skin from the cucumber. Cut thick slices of cucumber approx 4 - 5 mm thick. Blot each surface of the cucumber with kitchen paper to dry it.
Place a small spoonful of avocado onto each cucumber slice and top with a small piece of smoked trout.

Note: Smoked food, consumed in excess may be hazardous to the health. Serve in small quantities for flavour with accompanying foods rich in antioxidants.

Makes 30 servings (serve = 1 piece)
