Free Healthy Recipe - Avocado & Tomato Bruschetta

In macrobiotic cooking, all food is cooked or cured, but I like the freshness of raw fruit and vegies. This simple bruschetta is clean and tasty, and relies on top quality fresh ingredients. Make sure you use vine ripened or truss tomatoes which have a woody scent when held up to the nose. All other force grown tomatoes, picked before their prime are bland, flavourless and not worth eating.

Ingredients
1 avocado sliced
¼ cup basil, chopped
1 tbsp lime juice
4 slices spelt bread
1 tbsp olive oil
1 clove garlic
Method

Combine tomatoes, garlic, parsley and lime and set aside to allow the flavours to combine together.

Toast one side of the bread. Turn the bread over and rub the untoasted side with garlic before placing under the grill to toast, remove from the grill and top each slice with the avocado slices and tomato and basil.

Note: Mashed avocado makes a great Vitamin E-rich face pack to enrich and soften dry skin. Apply generously, leave for 20 minutes and rinse off with cool water.
