Free Healthy Recipe - Spinach, Avocado, Mango, Goats Cheese and Pinenut Salad

Dairy free, Low fat

This is an easy lunch and can be thrown together in no time and tastes scrumptious. It is essential to pick fruits that are perfectly ripe whilst retaining their shape.

Ingredients
1 mango sliced
½ avocado sliced
2 tbsp pinenuts, dry roasted
½ lime juiced
2 tsp olive oil
2 small knobs soft goats cheese
black pepper cracked
Method

Wash and steam the English spinach (steam for 3-4 minutes). In a sushi mat squeeze all excess moisture from the spinach and cut into 4 separate bundles and arrange on the plates.
Lay slices of mango and avocado over the spinach.
Season with the black pepper, lime juice and olive oil.
Top with the pinenuts and goats cheese - serve with slices of good quality wholegrain bread.
