Free Healthy Recipe - Chocolate hedgehogs
The Food CoachDairy free, Low fat, Wheat Free
These little treats are a terrific energy boost to add to the kid's lunch box or give them when they're straight from school. You will need a heavy duty food processor to make them. If you are catering for someone with a gluten intolerance or allergy substitute the oats and barley with 2 cups millet flour.
Ingredients
2 tbs hot water
Method
Combine all the ingredients in a food processor and process until the mixture is completely combined - add two tablespoons of hot water to help bind the ingredients and using your hands mould the mixture into small balls and refrigerate.
Note: Dried dates have an extremely high GI (103) and make a pick me up food after a very heavy exercise routine. They should not be eaten in excess or by people with blood sugar problems.
