Free Healthy Recipe - Spiced Roast Pepitas

At the end of the week when the office shuts down and staff congregate for drinks, why not offer these spiced pepitas as a snack. Compared to the nutritionally valueless flavoured chip, pepitas are a great source of protein, zinc, fibre, and beta-carotene, and roasted with a few spices taste terrific.

Ingredients
1 cup pepitas
1 tsp tea oil
1 tsp sea salt
¼ tsp cayenne
¼ tsp cumin, ground
Method

Pre heat the oven to 180 degrees Celsius.

Spread the pepitas on a baking sheet. Sprinkle the oil, sea salt and spices over them and using a large spoon stir through to ensure each seed is coated in the spice mix.
Place the seeds in the oven to roast for 6 minutes, turning the seeds over a couple of times to prevent burning.
Remove from the oven. Lay the seeds on another tray lined with absorbent paper and set aside to cool.

Note: Pepitas are delicate green seeds found inside the pumpkin kernel. They are believed to help alleviate symptoms of an enlarged prostate.
