Vitamin A and the caretenoids found in orange/ red fruits and vegetables are important for eye health. They play a role in protecting against cataracts and night blindness - the inability to see well in the dark and dim lights.

Ingredients
2 cups watercress
2 cups rockmelon
Method

Wash and peel the carrots. Wash and dry the watercress.

Place all the ingredients in a juicer and serve immediately.

Note: Most juice bars pre prepare the produce to save time, exposing their cut surface to oxidation and as a consequence, nutrient loss. If you can't make your own juice at home, buy from a juice bar with a high turnover to ensure the veggies and fruit are fresh and are prepared on a daily basis. You'll easily be able to tell by the taste.
