Free Healthy Recipe - Kohlrabi and kale slaw

Dairy free, Gluten free, Low carbohydrate, Low GI, Low sugar, Wheat Free

This fresh and simple salad tastes great with tuna or grilled chicken. It's ideal to make in advance as the kohlrabi holds it's texture unlike most other salad ingredients. Substitute plum vinegar with a pinch of salt of you can't source it from a local health food store.

1 kohlrabi bulb washed and trimmed
1 cup baby kale, washed
3 tbs olive oil
8 walnuts roughly chopped
1 tsp currants

Trim the kohlrabi and cut into fine straws.
Washed the kale and arrange it on two salad plates.
Combine the oil, vinegars, mustard and pepper in a small jar.
Arrange the shredded kohlrabi over the kale. Top with the currants and nuts and drizzle the dressing over each salad.
