Free Healthy Recipe - Thai BBQ Spatchcock

Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

Recipe of Game Meats.

Ingredients
350 grams spatchcock, deboned
Marinade:
100 ml coconut, milk
1 tbsp fish sauce
¼ tsp peppercorns, white
2 cloves garlic, crushed
1 tbsp coriander leaves, & stems chopped
1 tbsp pam sugar, grated
Salad:
1 cucumber lebanese, cut into matchsticks
100 grams tomato, cherry, halved

Dressing:
1 lime juiced
1 tbsp fish sauce
1 tbsp palm sugar
1 chilli pepper - fresh red, finely chopped

Method

Combine marinade ingredients and pour over spatchcock. Marinade for 1 hour.

Preheat a hotplate or frypan. Remove the spatchcock from marinade, reserving marinade. Thread four skewers through each spatchcock and cook over medium heat for 5 minutes on each side or until cooked through.

Bring remaining marinade to the boil in a small saucepan.

Combine all salad ingredients. Combine dressing ingredients and pour over salad. Serve with the spatchcock and reserved marinade.
