Free Healthy Recipe - Peach Wedges Dipped in Chocolate

Ingredients
6 peaches yellow variety, large, stones removed and cut into thick wedges
200 grams chocolate, white, melted
200 grams chocolate - dark, melted
½ cups coconut, shredded
60 grams pistachio nut, kernels, roughly chopped
Method

Melt chocolate. Bring 2 pans of water to the boil. Turn off the heat and place a bowl of grated chocolate or chocolate broken into very small pieces over each pan to melt in the heat of the steam. Let the chocolate sit for approx 5 minutes until it's melted.
Stir until smooth.

Dip half the peach wedges into melted white chocolate and gently press into the coconut. Place onto a baking tray lined with baking paper. Dip the remaining peach wedges into melted dark chocolate and gently press into the pistachios. Place onto baking tray lined with baking paper. Chill until set.

Note: Always turn off the heat under the pan of boiling water to melt the chocolate and wait for it to melt slowly - excess heat burns the chocolate.
