Free Healthy Recipe - Cranberry Sauce 1

Most recipes for cranberry sauce use 1 - 2 cups of sugar to make it palatable. That's the equivalent of between 570 and 1140 nutritionally valueless kilojoules the body really doesn't need. The stevia leaf powder and orange juice are all that's required to make this delicious cranberry sauce used in the recipes below. Once cooked store your sauce in an airtight jar and refrigerate for up to 10 days.

Ingredients
1 cup orange juice, freshly squeezed
300 grams cranberries, defrosted
Method

Soak the stevia leaf powder in boiling water for 5 minutes. Using a paper coffee filter, or piece of fine muslin strain the liquid and discard the remaining sediment.

Add the stevia liquid, orange juice and cranberries to a pan and bring to the boil. Reduce heat to simmer for 10 minutes or until the cranberries are soft and pulpy and the liquid is quite thick. Puree until smooth.

Note : Use cranberry sauce as an accompaniment to roast turkey or in cold turkey sandwiches. It's also delicious used to add flavour to poached fruits eg peaches and pears, or stirred through natural yoghurt.
